The Director of Dining Services is responsible for the total operation of the Dining Service Department based on established objectives, standards, policies and procedures in accordance with any local, state and federal guidelines.  Responsible for maintaining sound departmental relations and for integrating the dining service with the facility plan of operations.

Responsibilities

RESPONSIBILITIES:

DAILY

  • Completes tour of operation
  • Greet employees
  • Review’s Manager’s Log
  • Oversees and observes service in all areas, including Healthcare and our fine dining program
  • Resident contact
  • Observes food preparation and presentation
  • Evaluates progress of all Dining Service managers
  • Tastes food from all meals
  • “Showtime”  at all times in each dining area                                                                                      
  • Approves all Dining Service Department invoices
  • Makes entries in Manager’s Log
  • Oversees and conducts menu planning meetings

 WEEKLY

  • Hourly employee general meeting
  • Management staff meeting
  • (2) Meals with residents
  • Client meetings
  • Approves new hires
  • Orients, trains, evaluates staff, as necessary

 MONTHLY

  • Schedules management staff
  • Management attendance records
  • Month-end reports to Executive Director
  • Reviews and maintains Procedure Manual
  • Completes sanitation inspection
  • Attends facility Department Head Meeting – two times month
  • Management staff training
  • China, glass, flatware, linen, and small equipment orders
  • Special events planning in conjunction with Assistant Director of Dining Services
  • Schedules and coordinates in-services to staff
  • Monitors expenses and budget

 SEMI-ANNUALLY

  • “State of the Department” Report

 ANNUALLY

  • Budget
  • Year-end “State of the Department” Report
  • Management staff evaluations and objectives

 

Qualifications

QUALIFICATIONS:

Must possess a thorough knowledge of fine dining service operations, supervision and public relations.

 

ACCOUNTABILITIES:

  • Directs the supervision of all salary and hourly personnel and administers all personnel programs and policies.
  • Financially accountable for the Dining Service Department.
  • Ensures quality of food and preparation, and an enjoyable dining experience for the residents, guests, and staff.
  • Directs all phases of resident nutritional care program.
  • Directs safety, sanitation, security, and the facility maintenance programs.
  • Maintain good relations with residents and board members and close working relationships with the Executive Director and the various departments.
  • Serves on the facility’s committees and in professional organizations.
  • Schedules and coordinates in-service programs for food service staff.
  • Recruits, hires and evaluates supervisory personnel.
  • As a Department Head, will be held accountable for safety/risk management in Dining Services Department.
  • Adheres to all Hunt Community Policies and Procedures including uniform, break schedule and smoking.
